Rice is not unhealthy. If you want to add other grains to your rice like millet and corn that makes it healthier but billions of people have lived healthy lives with rice as a staple for millennia.


Sweet potatoes are my go to. Tasty filling and full of good vitamins. If you want something similar to rice but healthier you can try cauliflower rice.


Potatoes have half the calories of rice and are usually pretty cheap.


I cook quinoa and rice 50-50 as if I would cook rice so at least you’re adding some nutrients from the quinoa. And you hardly know it wasn’t full rice.


Barley! Cheap, hearty, and about 4 g soluble fiber per serving.
