I thought the nuts were chickpeas, I might try it with that, roasted chickpeas are lovely 🙂 thanks for the recipe!


Summer Garden Tomato and Arugula Salad: This super cheap and healthy salad will bring a touch of tang as a side dish or could be a lite lunch all on it’s own! The salted tomatoes add to the tangy flavor. Serves 4 as a side salad. Ingredients: * 2 1/2 Cups Wild Arugula (or any type really) – $2.99 * 10-12 Garden Grown Cherry Tomatoes (if you need to buy them, splurge a little and buy the highest quality possible, this is the star after all) – $Free, basically: I grew “Tumbler” tomatoes * 12 Whole Macadamia Nuts, Halved Or Quartered – Buy at store that sells bulk, you can buy exactly 12 and it will be less than a dollar – >$1.00 * 1/2 Tsp Dried Parsley * Cracked Black Pepper to taste * Salt (just a sprinkle) For the Dressing – This makes extra, you don’t need this much dressing for this salad * 1/2 Cup extra virgin olive oil (or any preferred quality oil) * 4 Tbl SP Organic Red Wine Vinegar * 1/4 Tsp Onion Powder * 2 Tsp Dijon Mustard * 1 Tsp Italian Seasonings * 1/2 Tsp Salt * 1 Tbl SP Dark Honey (or any honey) * Put all ingredients into a jar or shaker and shake to combine. Let the flavors meld for at least one hour Directions: 1. Cut the tomatoes in half lengthwise, then cut in half again lengthwise so that each is quartered. 2. Put tomatoes in a bowl and lightly salt them. Put in refrigerator for 20-30 minutes so that they start to release a little of their juices 3. Put the arugula in a bowl and top with the juicy tomatoes, evenly spreading over the greens. 4. Scatter the macadamia nuts on top. 5. Shake the dried parsley over the top and crack some black pepper over the top to taste. 6. Serve as is and let people add the dressing to taste or toss yourself with about 1/4 of the dressing and save the rest for another day/salad. Note: Arugula does not hold up well once wet for very long. Make what you will eat and then remake the next day if you want to have it over time. TLDR: Put homegrown tomatoes with arugula, macadamia nuts and parsley together. Toss in a homemade vinaigrette and make some cheap and healthy mouth magic!


Gorgeous!!! I love to make salads like this and i just flop in a can of chickpeas or white beans to make it a meal salad :)) sunflower seeds are my go to, i use them a LOT since they’re $2/lb bulk or at Trader Joe’s so i use a heavy hand


Is arugula the same thing as rocket?


Healthy for sure … cheap?
